At Great Harvest, we believe in providing customers with phenomenal tasting products. But we also believe in providing the greatest possible nutritional value. Studies show that fresher foods – such as milled grains, vegetables, and fruits – are better for you nutritionally. So we strive to keep things fresh.    

All of our products are made from scratch – no mixes or frozen doughs. We mill our whole wheat flour fresh daily, filling the top of our on-site mill with whole wheat kernels direct from Montana, then watching 100% whole wheat flour flow into the bins below. There is no separation of flour components. Nothing is added or removed. We end up with pure fresh flour from the whole grain, which is what makes it good for you.   

We’ve always known freshly milled flour tastes better. We’ve done lots of blind taste tests just to prove that fresh flour makes a difference. But now we also know that fresh flour is better nutritionally as well. When a kernel of wheat is milled, all parts of the flour are oxidized through exposure to air. The germ, which contains free fatty acids, is particularly vulnerable to this oxidization. So we use our flour within a day or two after it is milled to ensure that the nutritive value of our products is the best it can be.
