Great Harvest: Baking a Difference


Great Harvest Bread originated near the wheat fields of central Montana in the late 1970’s, when Pete and Laura Wakeman – then in their early 20’s - opened their first bread store in Great Falls. After many years of perfecting their recipes and building a devoted following for their rich, moist whole wheat breads made from freshly milled flour and baked from scratch, they began to offer the magic of their process to others. Today, there are over 200 locally-owned Great Harvest Bread Co. stores across the country, including two in Alaska.   

High quality wheat from Montana’s “Golden Triangle” is the key to our delicious whole grain breads. Great Harvest purchases it from family-owned farms, tests it for protein content and baking qualities, then packages and ships it in the kernel directly from the wheat country.  Every day in the bakery, we mill the wheat into flour for use in all of our whole wheat breads, including our popular Honey Whole Wheat, Nine Grain, High 5 Fiber, Dakota, and many others. We also use it for many of our cookies and other sweets. Look for the wheat stalks on our menu for 100% whole wheat products – you will taste the rich flavor and enjoy the many health benefits of eating whole grains.   

Another key to our tasty and wholesome bread is our process of making each batch from scratch, using simple ingredients, no preservatives, and a time-intensive baking process that takes no short-cuts. We knead each loaf by hand and bake each batch with care.
