GRILLED CHICKEN SANDWICH & BELL PEPPER SPREAD
1. In a covered skillet and with 2 Tbs. of olive oil, sauté two cored, seeded and chopped bell peppers with 2 thinly sliced garlic cloves, and 1/4 tsp. of salt until tender (about 10 minutes).
2. Remove from skillet and add 1/4 tsp. of salt and 1/2 tsp. of pepper. Makes 3/4 cup.
3. Grill chicken breast.
4. Brush oil olive on one side of the bread slices. Grill slices with the oil side down.
5. Add Bell Pepper Spread to grilled bread and top off with grilled Chicken Breast. Top with shredded Parmesan cheese. Enjoy!

POMODORO SPREAD
1. Sauté 1/4 cup chopped onion and 1 minced garlic clove in 1/4 cup of olive oil for 3 minutes.
2. Add 3 large diced tomatoes to heat.
3. Remove from heat. Add 1/2 cup chopped basil, 1/2 tsp. salt and 1/8 tsp. pepper. Spread on the grilled bread of your choice. Delicious!
MUSTARD HERB VINAIGRETTE DIP
1. Combine 1/4 cup olive oil, 2 Tbs. red wine vinegar, 1 tsp. Dijon mustard.
2. Add 1/4 cup finely chopped basil, 2 Tbs. chopped chives, 1 tsp. chopped fresh oregano.
3. Add salt and pepper to taste and you're ready to dip your favorite grilled breads. Yum!
